Remember these from way back when? Ok if you are not as old as me, perhaps it is less way back than in my case! Anyway….why not indulge your inner child with this ice cream float recipe. A perfect way of cooling down this summer. In this tropically inspired combination we used cream soda with some lime syrup as a base. Topped with coconut and pineapple ice cream, and a bright strawberry garnish, this is a (pretty much) effortless summer drink recipe.
The acidity of pineapple and strawberry are well matched, softened by the coconut milk and a touch of vanilla in the ice cream. This is a vegan friendly and dairy free ice cream, more ‘granita’ in texture than a traditional gelato, as we kept it egg free. It makes for a light, low fat and luscious summer cooler.
We have often talked about our love of our high speed blender – the Optimum 9400 by Froothie, and it served us well again, making short work of blitzing the whole of the pineapple (including the fibrous core) into a smooth puree. Add a touch of rum if you want – the whole drink has shades of pina colada, but we kept ours soft and child friendly.
- 1 medium pineapple
- 200ml coconut milk
- 30ml agave syrup
- 1 teaspoon vanilla bean paste or seeds of 1 vanilla pod
- Lime syrup
- Soda water
- Strawberries to garnish
- Peel and chop the pineapple.
- Place it in a high speed blender and add the coconut milk, agave and vanilla.
- Blitz on high to a smooth puree consistency.
- Pour into an ice cream maker and churn till set.
- Prepare the lime soda by combining the syrup and soda water to taste.
- Pour the soda into a glass and top with the ice cream.
- Garnish with strawberries.
