Todays post is about a couple more interesting finger foods that we made last week and that are yummy and you may find interesting to try in smaller and/or larger portions.
1. Mini chicken nuggets
For this we minced chicken breast and thigh meat in the processor, along with some lightly fried onion and garlic, an egg, cumin powder, coriander powder and pepper, along with some dried breadcrumbs.
We then shaped these into small patties. A good way to do these is first to roll into meatballs and then squash them flat, this way they are less likely to fall apart on frying than iff you shape them into flat rounds in the first place. They freeze well
2. Mini lamb burgers
Again after frying onion and garlic with a bit of ginger in a frying pan, we tossed this with some diced lamb into a food processor. Add an egg, pepper, salt and herb/spices and pulse it into finely chopped meat. This time we added cumin, cinnamon and a bit of paprika. Again after frying through these freeze very well and make a great meal. We stacked with melted cheese, diced tomato and chopped up marinated artichoke hearts and served with roasted sweet potato chips. Yum.
