I have chosen Banana for the February One Ingredient Linky that I host with Laura at How to Cook Good Food. I do hope you will share your Banana recipes. Whilst bananas are good all year round, the Windward Island Variety comes into season now (until May). I am hoping it will give us different ways of using this fruit, which can be a bit of a marmite fruit, so I imagine there may be some who will sit out this month. However for those who do like bananas, there is an immense amount of variety. Aside from a classic banana loaf, it pairs well with puff pastry in tarte tatin, in trifles, is a classic on the barbeque (with chocolate and marshmallows of course) and how about this delicious banana, cardamom, chocolate spread.

It works in South Asian dishes alongside fish and even meat, as a salsa or adding sweetness to a sauce.

    Ah – I’ll sit this one out (I’ve written frequently about how I am not a banana fan!) But I really look forward to the next challenge!

  3. Wonderful – I hate bananas but actually just made the one recipe I actually like that uses bananas, I was planning to post it on my blog in time for pancake day (so no prizes for guessing what the recipe is!). So that works out really well :-)
