Pasta as a main or side dish is a staple for our house, but we have tended to become rather boring and stick to a triad of tomato, bolognese and pesto sauce. So when Jac asked me to host the Pasta Please recipe linky for May, I opted to ask people to send in recipes for Pasta sauces.
Here are the recipes that came in, hopefully you will be as inspired as we have been to extend our sauce repertoire.
Ren uses seasonal English Asparagus with Smoked Salmon and Cream Cheese for this beautiful and quick pasta recipe
This Hidden Cauliflower Cheese Sauce from Elizabeth’s Kitchen diary looks far from virtuous, but adds depth of flavour and goodness of a vegetable in the sauce. Genius idea!
Katie of Feeding Boys and a Firefighter has a light pasta dressing with asparagus, tomatoes and bacon binded with some fat-free Greek yoghurt. It is a particularly healthy one since she is doing a series of weightwatchers recipes.
Fromage Homage has used Cashel Blue Cheese combined with nettles in this foragers special – Gnocchi with Nettles and Cashel Blue.
Tomato based sauces
This roasted tomato and pepper sauce is a key sauce for all kinds of cooking in our kitchen – roasting adds some extra sweetness though we do for the sake of bulk and value for money, add the roasted vegetables into a simmering stock pot of tinned tomatoes.
Paprika adds a more spicy sweet heat to this sauce that Rachel uses on rigatoni. A dash of yoghurt makes this sauce eligible for creamy as well as tomatoey but it looks red so we have classified it here!
Herb-laden Pasta Sauces
This Spring herb sauce by Laura at How to cook good food is simple, quick and healthy. It’s a creme fraiche base with a selection of chopped salad leaves and garden herbs mixed into spaghetti.
Tired of shop bought pesto? How about making some seasonal variants? In general the formula of herb, nuts and some cheese can be adapted as you please, and pesto is a great sauce for salads and dips as well as pasta.
This Wild Garlic and Hazelnut pesto from Vohn is a super flavour combination , in fact Vohn is a woman after our own hearts since we also did a similar pesto adding truffle oil and using walnuts instead.
Over at Food Family and Friends, there is another greens loaded yumtastic sauce we like the look of – spinach and artichoke pesto.
