10 One Pot Meal Ideas for easy midweek dining.

Monday morning after a fortnight in Florida.

and we are feeling cold, jet lagged and somewhat damp.

We did all the family vacation things

– We even got a chance to see a rocket launch from the Kennedy Space Center.

But back to a wet and grey England, and the fact that it is Monday. Back to work and no time to have prepped food .. So here are some easy one pot meal ideas from our own blog and some of our favourite food blogs that we think offer some great midweek meal ideas.

Roasting pieces of chicken rather than the whole bird makes a quick meal, and if you cook the veggies with it (we’ve put thinly sliced potatoes in the bottom) they will soak up the cooking juices. Garnish with some pomegranate and a little pesto and you’ve a colourful and delicious roast dinner in one.

This chicken with couscous and olives from Sarah at Maison Cupcake is a great one for effortless midweek entertaining. A big, hearty dish with bold flavours.

In a similar style, our Persian Chicken and rice casserole (made, like the above, in a Le Creuset pot, an optional but rather attractive cooking vessel).

If you like curries, here is a quick and unusual one – a crab, cabbage and coconut stir fried curry that you will have ready in 20 minutes flat. Totally easy, just pick up some flatbreads to pile the curry into for a casual supper.

And this vegetarian curry – with chickpeas and potatoes is another easy recipe. With a mild sweet and sour tamarind and tomato mix, this is a traditional street food idea from India and you can serve it with rice, flatbreads or if you want to go authentic, top with some crispy bombay mix and a little thick yoghurt, a few chilli flakes and it makes a typically Indian melange of textures, flavours and temperatures.

This moroccan spiced chicken lentil and potato curry with fiery harissa from Emily at A Mummy too is bound to cheer up any dull morning.

We had some great Mexican food in Florida so this Fiesta Chicken Enchilada soup  from A Dish of Daily Life will bring back memories of some lovely meals.

Comfort food does not get better (or easier) than one pot pasta dishes and this goulash is perfect family fare.

And one pot pasta is a bit of a trend right now – so here is another one – cheesy cajun pasta from Domestic Superhero.

    I don’t even know where to begin! These recipes all look fantastic. I do miss a good bit of roast chicken so that first dish is probably my favourite :)

    As a Floridian (albeit one who now lives in Scotland) I am chuffed you enjoyed your holiday so much. I haven’t been to a Florida theme park in years but we spend time at the beach with family every year, in either October or December. You must go back in the cooler months as our summer temps here are often the same as Florida winter ones! Anyway, it is always good to have some one-pot ideas to refer to when one has jet lag and no energy to do a big shop and even bigger cooking. Thanks for sharing, Nazima.

    Crab, cabbage and coconut curry looks delicious. I would like to give it a go as it says easy and quick. I love coconut in curry.
